Tomme de Brebis
The Pierucci is a well known milk co-operative that has rich and highly perfumed ewe’s milk. It is right in the middle of Corsica’s stunning natural landscape that the Pierucci family ha long been making its cheeses, preserving the spirit of the men and women who have contributed to its success.
Sheep’s milk is collected from the herds of local Corsican breeds raised on the plains of the east coast and fed on typical natural maquis. The semi-hard paste becomes granular with age, but keeps its aromatic and rich flavour. This cheese is greatly appreciated by the local population.
