Beaufort is a classic high mountain cheese produced in French Alps by small traditional producers. It benefits from cattle grazing on lush pastures studded with aromatic flowers and alpine flora. The paste is a creamy, pale gold colour, smooth in texture, but as it matures cracks appear, ripening the cheese. The flavours are lovely – with an almost sweet almond nuttiness, the taste is never abrasive on the tongue, even with aged cheeses.

Like other mountain cheeses, Beaufort melts well and is a very good choice for hot sandwiches, or cooked in a croque-monsieur or a fondue. It pairs well with Chablis, red Crozes-Hermitage and Côtes du Rhône.
