Bailly Lapierre

Based in the town of Bailly, the birthplace of the Crémant de Bourgogne, Bailly-Lapierre is a small co-operative cave to the south of Chablis in Auxerrois. They have over 400 growers, all with vineyards over Kimmeridgean clay which were former seabeds.

Everything is hand harvested and made in the traditional method. The collective has been certified organic since 2006.
