This pasteurized cow’s milk cheese is made in the classic Abbey Trappe style with a semi-hard, smooth texture and is a long-keeping, easy to eat cheese. The Timanoix is washed with walnut liquor, giving the cheese an edible rind, infused gently with the warm walnut flavour.
The Timanoix cheese is made by monks at the Abbey of Timadeuc, from a recipe shared with them by the nuns at the sister Abbey of Echourgnac in Perigord. They have been making this cheese since 1868.
